La Ferme aquacole « La Truite des Pyrénées » est installée depuis 1953 au confluent de trois gaves de renom : le gave de Barèges, le gave de Gavarnie et le gave de Cauterets. Dans cet environnement, c’est plus d’un demi-siècle d’histoire pour cette entreprise familiale à la tête de laquelle se sont succédés Abel, le grand-père, François, le père et Franck, le fils. Ce dernier perpétue la tradition familiale et produit de façon éthique, raisonnée et responsable, une truite d’exception, à la chair tendre et délicate, au goût fin et prononcé et aux qualités nutritionnelles et diététiques exemplaires.
